Lentil Bell Pepper Salad

Ingredients

1 cup lentils
3 cups of water
1 tablespoon minced garlic
1 chicken bouillon cube
1/2 teaspoon cumin powder
1 teaspoon salt
1 medium red bell pepper, diced
100g olives
50g feta cheese
4 spring onions

Method

Step 01

Take 3 cups of water add a chicken bouillon cube, 1/2 teaspoon cumin powder, and minced garlic, salt – Boil and add the lentils for 30 minutes

Step 02

In a bowl put the olive oil, sugar and chili and pepper – whisk well

Step 03

Chop Spring onion

Step 04

Fold in lentils – chopped onions – olives and feta cheese

Step 05

Blend together – 1 tablespoons olive oil – 1 tablespoons sugar
1 tablespoons lemon juice – 1/2 teaspoon freshly ground black pepper

Step 06

Fold into the salad
