1 teaspoon crushed garlic

2 teaspoon curry

Salt and pepper to season

ΒΌ teaspoon chili flakes

1 cup lentils

1 teaspoon olive oil

300 g butternut cubed

100 g button mushrooms

2 onions cut into quarters

10ml Dijon mustard

15 ml balsamic vinegar

45ml olive oil

15 ml honey or sweetener of choice

I handful of cherry tomatoes halved

75 g feta cheese cubed

Micro salad leaves or rocket


Step 01

Add curry, salt and garlic to the water you are boiling the lentils then boil for 30 minutes. Pour water off and rinse with fresh cold water.

Step 02

Put butternut, onion and mushrooms into a pan, season and toss with a teaspoon of olive oil, sprinkle with the chili fakes and bake for 30 minutes in a hot oven 200c cool for 10 minutes.

Step 03

Blend together a dressing of 45ml olive oil, mustard, honey and mustard.

Step 04

Fold together the roasted vegetables and the lentils add the dressing.

Step 05

Lastly, plate up adding the feta, tomatoes and the micro leaves or rocket.
